Physicochemical Quality of Certified and Uncertified Honeys from the Brazilian Semi-Arid Region

چکیده

O Brasil se destaca como um dos principais produtores mundiais de mel. A legislação brasileira estabelece parâmetros qualidade e análises físico-químicas para avaliar controlar a do mel comercializado. Essas também são importantes detectar adulterações que podem causar diversos efeitos negativos aos consumidores. objetivo deste estudo foi comparar físico-química amostras certificadas não-certificadas produzidas em diferentes cidades da região semiárida brasileira. Vinte quatro foram coletadas analisadas: com garantia genuinidade origem conhecida vinte não-certificadas. As seguintes realizadas duplicata: umidade, atividade água, açúcares redutores, sacarose, matéria insolúvel, cinzas, acidez livre, pH hidroximetilfurfural (HMF). conteúdo sacarose mais alto nas (p?0.05), enquanto as apresentaram maior livre (p?0.05). Todas atenderam padrões redutores cinzas. Sacarose HMF estavam dentro apenas certificadas. Algumas ambos os grupos não insolúvel livre. É possível produzir escala comercial regiões rurais semiárido brasileiro, desde alguns cuidados sejam tomados, especialmente relação ao tempo prolongado armazenamento, atendam qualidade.

 Abstract
 Brazil stands out one the world’s largest producers of honey. The Brazilian legislation establish quality standards and physicochemical analyses to evaluate control honey sold. These are also important detect adulterations that can cause several negative effects consumers. aim this study was compare certified uncertified samples produced in different cities semi-arid region. Twenty-four from region were collected analysed: four with guarantee genuineness known history twenty following analysis performed duplicate: moisture, water activity, reducing sugars, sucrose, insoluble matter, ash, free acidity, hydroxymethylfurfural Sucrose content higher on while had acidity All fit for sugars ash. within only samples. Some both groups not matter acidity. It is possible produce commercial scale rural regions semi-arid, provided some precautions taken, especially relation prolonged storage time, so meet standards.
